check this deliciousness:
grilled peaches
say whaaa?

this is my new fav summer time dessert

here's what you need:
-some juicy fresh peaches
-vanilla ice cream 
(i tried it once with Almond Dream Vanilla ice cream, a great dairy-free option, but also with good old fashioned Tillamook Vanilla ice cream which was also yummy)
-caramel sauce (see below for a kick-a recipe)

here's what you do:
1. cut the peaches in half, remove pit, and put them on a pre-heated (clean) charcoal grill
2. leave them until warmed --about 10 minutes depending on how hot the grill is
3. remove peaches and put a scoop of vanilla ice cream in the peach pit hole
4. drizzle caramel sauce over the top
5. promptly faint because it tastes so good

here's the recipe for the caramel sauce i made with it:
1 Cup butter
1 16-ounce package(2 ¼ cups packed) brown  sugar
Dash salt
1 Cup light corn syrup
1 14-ounce can sweetened condensed milk
1 teaspoon vanilla

-- Melt the 1 cup butter in a heavy sauce pan. Add sugar and salt; stir thoroughly.  Stir in corn syrup.
--Gradually add the sweetened condensed milk, stirring constantly. 
--Stir over medium heat slightly thickened. This will take 7-10 minutes. 
--Remove from heat; stir in vanilla.  Pour into buttered dish or jar. 
  **Makes about 2 ½ pounds.


this is my mother-in-laws recipe and also just so happens to be how you make the most delicious christmas caramels in the world, so just think of this recipe as "christmas in july"
